Erica Muñoz, also known as NYC’s “Vegan Godmother of Tacos,” is a visionary entrepreneur, chef, and community builder who has been shaping culture through food and wellness for over 20 years. As the owner of Madrina Vegana, New York City’s first vegan Mexican food truck, Erica has introduced thousands to bold plant-based flavors inspired by her Mexican heritage and family traditions.

Her journey from running a thriving spa business to pioneering in the vegan culinary world reflects her mission-driven approach: creating spaces that nourish both body and soul while uplifting the community. In 2025, Erica founded Planted Culture Market at Washington Square Park—reviving the city’s vegan festival scene after its decline. What began as a grassroots effort quickly grew into a movement: a culturally diverse 100% vegan outdoor food court showcasing the best chefs, vendors, and small businesses from across New York and beyond.

Erica built the market not just as a food event, but as a celebration of culture, community, and inclusivity. She intentionally curated vendors representing different backgrounds, cuisines, and traditions, making it a space where vegans, vegetarians, and the “vegan-curious” all feel welcome. Under her leadership, Planted Culture Market has become a hub for local food innovation and cultural exchange—solidifying her role as a leader in the movement to make plant-based living vibrant, accessible, and fun.
